Preparation of Salsa: Mix tomato, onion, and jalapeno, lime juice to taste, kosher salt, and pepper in a medium bowl. Mix avocado and cilantro. Add cayenne.
Preparation of Tacos: mix flour, cumin, salt, and cayenne in a medium bowl. Whisk in beer to create a batter.
Coat tilapia pieces in the batter.

Remove the mixture from heat and allow it to be cooled.
Roll out the dough to a 6X12 inch rectangle on a lightly floured surface.
Add meat mixture spreading onto the dough. Leave ½ inch border around the edges.
Add other remaining ingredients and fold the dough over the filling, forming a 12-inch roll. Pinch the edge together firmly to seal with your finger or fork.
Place the Stromboli on the baking sheet.
Bake 15 to 18 minutes or wait until the crust is golden brown.

Fresh Rosemary-1 Sprig
Fresh Thyme-1 Sprig

2X150g Center cut Fillet Steaks, 2 cm thick
Fresh Flat-leaf parsley-15 gm.
Unsalted Butter-25 g
Single cream-100 ml
Wholegrain of French Mustard-1 teaspoon

Maris Piper Potatoes-400 g
Vegetable oil for frying

Mix the rosemary and thyme with a good pinch of black pepper, red wine vinegar, and 1 tablespoon olive oil in a pestle and mortar. Mash to a paste.
Rub the paste all over the steak and let it be marinated for 30 minutes.
For the shoestring fries peel the potatoes first. Then slice very finely into matchsticks. Soak the slices in a bowl of water to the starch to be removed.
In the meantime, half fill a pan with vegetable oil and heat to 180 degrees.
Drain the potatoes and make dry. Add to the oil and fry for 2 to 3 minutes. The potatoes need to be cooked through and golden.
Removing to kitchen paper to drain season with salt.
Deseed and dice the peppers finely. Dress with olive oil and keep aside.
Quarter the mushrooms.
Chop the parsley finely.
Heat a frying pan with screaming hot.
Brush the herbs of the steak
Add the steak in the pan and a drizzle of olive oil and knob of butter.
Cook for 6 minutes moving and turning the steaks regularly. Make sure to sear the edges and baste with the juices.
Add the mushroom and pinch of salt when the butter is golden and the steak has good color. Shake the Pan to keep the ingredients moving
Add the splash of brandy till the pan to flambe.
Add a swig of red wine when the flames subside. Reduce the heat by half.
Drizzle in the cream, turn the steaks in the sauce to coat. Cook until the steaks are nicely coated.

Slice the steaks in half and keep on a plate.
Divide up the fries and scatter over the dressed pepper.

Bring it to boil and then cook for 10 minutes as it is thickened. If it becomes too thick add a splash of water.
Now peel the prawns. Do not remove the tails.
Cut the backside of the prawns and open them out like a book.
Now add to the pan and cook for 4 minutes to be cooked and turn into pink.
Mix parsley leaves and season.
The food is ready to serve. Serve it lemon wedges and nice bread.

Heat a nonstick frying pan and add 3 tablespoons of oil to heat. When it becomes hot and smoking adds half of the mustard seeds and curry leaves, the fenugreek seeds, ginger.
Fry the ingredients for few seconds. Then mix onion and cook over medium heat. Cook until it is dark golden.
Add chili powder, coriander, turmeric, and cook for a few seconds.
Mix tomato and kokum or tamarind.
Cook until you can see oil separating from the sauce.
Mix water of few tablespoons as the sauce gets back to the consistency as it was before.
Season with sea salt. Add the prawns.
Cook the prawns until it is cooked through and the sauce becomes dry.
Now mix coconut oil and bring to boil. As it is boiled turn the heat down to low.
Heat 1 tablespoon of oil in another pan along with the chilies, remaining mustard seeds, curry leaves.
Fry for 10 seconds and tip into the curry.
Your Malabar Prawn Curry is ready to be served with steamed rice.

Finely Sliced Red Chili-1

Halved 2 Heads, Bok Choi

Add sugar and a splash of water in a large shallow pan.
Heat gently as the sugar be dissolved.
Now increase the heat and bubble the syrup as long as it turns a dark amber color.
Add the fish sauce, most of the chili and ginger, and 1 tablespoon of water.
Cook to boil until it turns into syrupy.
Mix the fish fillets keeping skin-side down.
Add bok choi, keeping cut side down.
Use a lid to cover the pan.
Cook for 4-5 minutes as the fish is cooked through and the bok choi is wilted.
Turn off the heat now.
Add the lemon and scatter with the remaining chili, ginger, and the coriander sprigs.
Serve with rice.

Remove the fat of the sirloin. Slice the fat finely and put it in a cold non-stick frying pan.
Put the pan on medium heat to crisp up.
Peel the ginger and cut into matchstick. Add to that crisp.
Cut of the muscle.
Dice the steak into 3cm chunks.
Mix with the miso as it is coated well.
Remove the crispy fat and ginger and put aside.
Add the steak chunks into the pan.
Cook for 4 minutes, tossing constantly.
Mix the honey and 1 tablespoon of red wine vinegar.
Toss for one minute more. It will be shiny and sticky.
In the meantime, halve the pakchoi and cook it in a pan of boiling water for one minute as they retain a bit of crunch.
Transfer the steak and sticky juice into a serving dish and add crispy bits.

Peel away the skin of the tomatoes with a sharp knife. Start from the cross that you did.
Cut the tomatoes into quarters and remove the seeds and any membrane. Cut into small dice and put them aside.
Cook the pasta in the boiling water as is instructed in the packet.
In the meantime heat oil in a large frying pan.
Add the garlic and fry for 2 minutes until it is turning to golden.
Push these one side of the pan.
Add prawn and scallops increasing the heat. Cook for 1 to 2 minutes as the prawns turn into pink and scallops are turning into golden.
Remove these from the pan and keep on a plate.
now, add the saffron, mussels and white wine and some seasoning in the pan
Cover the pan with a lid and let the ingredients be steamed for 3 minutes or more until the mussel open.
Mix lemon juice, zest, and the cream to the sauce. Check the seasoning.
Add the drained pasta.
Add prawns, scallops, and diced tomato.
Mix everything and cook for another 2 minutes.
Wait for a while as the pasta some of the sauce and is cooked well.
Add parsley and mine nuts. Toss everything again.

Smash the prawn with the side of the knife and chop them finely.
Peel the shallot and garlic and chop finely.
Trim and chop the spring onions. (White and green parts need to be separated).
Chop coriander leaves finely.
Place the prawns, shallot, garlic, coriander, white parts of onion in a large bowl, season with black pepper and a pinch of sea salt, and mix these well.
Spoon a teaspoon of the mixture in the middle of the wrapping paper.
Brush the edge of one wrapper with water. Fold it in half. Pleat and pinch the edges together to secure.

Golden Caster Sugar-1 tablespoon

Heat the oven to 200C.
Remove excess fat from the duck but don’t remove any jelly.
Place the carrots, garlic, orange wedges into a large tin for toasting. Mix oil and season well.
Season the duck legs and place on the top of the veg, keeping skin side up.
Roast for 40 minutes. The carrots will be tendered and the duck will be turning into gold.
Mix the citrus juice, vinegar, and sugar. Stir them well until the sugar dissolves.
Pour over the veg. add chicken stock or jellified duck.
Tuck in the bay and thyme here and there.
Roast for 10 minutes until the carrots are surrounded with syrupy sauce and the duck is golden.
Season the sauce to taste.
