  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onion and potato. Cook for four minutes or until the onion is slightly softened stirring occasionally.
  3. Add garlic, chili powder, cumin, chipotle, and salt. Cook for 30 seconds stirring constantly. It will release the fragrance.
  4. Add water. Cover the pan and reduce heat. Cook for 10 to 12 minutes and wait until the potato is tender.
  5. Add tomatoes, beans, and lime juice. Increase heat to high, stirring often.
  6. Reduce heat to maintain a simmer and cook until slightly reduced about 4 minutes.
  7. Remove from the heat and mix cilantro.

  3. Coat tilapia pieces in the batter.

  5. Letting excess batter drip into the bowl, add the fish to the pan.
  6. Cook about 2 to 4 minutes per side to make the fish crispy.

  4. Slit the pork about 3/4 way lengthwise down the center of the pork with a sharp knife. Be careful, not to cut all the way through.
  5. Mix garlic, oil, onion powder, and pepper in a bowl. Mix them well.
  6. Spread the mixture over the pork.
  7. Add one spoon stuffing into the slit and pack lightly with your fingers.
  8. Bake about 25 minutes.
  9. After 5 minutes cut into 1 – ½ inch slices.
  10. Serve immediately.

  4. Add the mushrooms and cook for 2 minutes more.
  5. Remove the mixture from heat and allow it to be cooled.
  6. Roll out the dough to a 6X12 inch rectangle on a lightly floured surface.
  7. Add meat mixture spreading onto the dough. Leave ½ inch border around the edges.
  8. Add other remaining ingredients and fold the dough over the filling, forming a 12-inch roll. Pinch the edge together firmly to seal with your finger or fork.
  9. Place the Stromboli on the baking sheet.
  10. Bake 15 to 18 minutes or wait until the crust is golden brown.

  6. Mix the cornstarch to the reserved ¼ cup of sauce and blend.
  7. Mix with the chicken and continue the cooking for 5 to 7 minutes uncovering the skillet.
  8. Stir occasionally and wait until the sauce is thickened.

Preparation:

  1. Place a large skillet over medium-high heat.
  2. Add butter into the skillet to be melted.
  3. Add mushrooms and cook for 2 to 3 minutes.

  • Fresh Rosemary-1 Sprig
  • Fresh Thyme-1 Sprig
  • Red Wine Vinegar-1 teaspoon
  • Olive Oil
  • 2X150g Center cut Fillet Steaks, 2 cm thick
  • Chestnut mushrooms-100g
  • Fresh Flat-leaf parsley-15 gm.
  • Unsalted Butter-25 g
  • Brandy 10ml
  • Red Wine-50ml
  • Single cream-100 ml
  • Wholegrain of French Mustard-1 teaspoon
  • English Mustard-1 teaspoon
  • Shoestring Fries
  • Maris Piper Potatoes-400 g
  • Vegetable oil for frying
  • Pepper Sprinkle
  • Red Pepper-1/4teaspoon
  • Orange Pepper-1/4 teaspoon
  • Yellow Pepper-1/4 teaspoon
  • Extra Virgin Olive Oil.

Preparation:

  1. Mix the rosemary and thyme with a good pinch of black pepper, red wine vinegar, and 1 tablespoon olive oil in a pestle and mortar. Mash to a paste.
  2. Rub the paste all over the steak and let it be marinated for 30 minutes.
  3. For the shoestring fries peel the potatoes first. Then slice very finely into matchsticks. Soak the slices in a bowl of water to the starch to be removed.
  4. In the meantime, half fill a pan with vegetable oil and heat to 180 degrees.
  5. Drain the potatoes and make dry. Add to the oil and fry for 2 to 3 minutes. The potatoes need to be cooked through and golden.
  6. Removing to kitchen paper to drain season with salt.
  7. Deseed and dice the peppers finely. Dress with olive oil and keep aside.
  8. Quarter the mushrooms.
  9. Chop the parsley finely.
  10. Heat a frying pan with screaming hot.
  11. Brush the herbs of the steak
  12. Add the steak in the pan and a drizzle of olive oil and knob of butter.
  13. Cook for 6 minutes moving and turning the steaks regularly. Make sure to sear the edges and baste with the juices.
  14. Add the mushroom and pinch of salt when the butter is golden and the steak has good color. Shake the Pan to keep the ingredients moving
  15. Add the splash of brandy till the pan to flambe.
  16. Add a swig of red wine when the flames subside. Reduce the heat by half.
  17. Drizzle in the cream, turn the steaks in the sauce to coat. Cook until the steaks are nicely coated.
  18. Add the parsley and mustards. Cook through.
  19. Slice the steaks in half and keep on a plate.
  20. Divide up the fries and scatter over the dressed pepper.

Ingredients:

  • Cloves of Garlic-2
  • Bulb of Fennel-1
  • A few sprigs of Fresh-Flat Parsley
  • Olive Oil
  • Ripe Cherry Tomatoes-750g
  • White Wine-1 Large Wineglass
  • Large Prawns-10
  • Lemon-1

Preparation:

  1. Peel the garlic slice finely.
  2. Slice the fennel trimming it.
  3. Chop the parsley leaves and stalks roughly.
  4. Heat oil in a saucepan and add garlic into it.
  5. Fry the garlic until it is golden.
  6. Mix the fennel and parsley stalks and cook for 10 minutes as the parsley be soften.
  7. Halve half the tomatoes and the rest as a whole. Add to the pan with wine.
  8. Bring it to boil and then cook for 10 minutes as it is thickened. If it becomes too thick add a splash of water.
  9. Now peel the prawns. Do not remove the tails.
  10. Cut the backside of the prawns and open them out like a book.
  11. Now add to the pan and cook for 4 minutes to be cooked and turn into pink.
  12. Mix parsley leaves and season.
  13. The food is ready to serve. Serve it lemon wedges and nice bread.

  • Ginger-3 cm piece
  • Small Red Onions-2
  • Ripe Tomatoes-150g
  • Vegetable or Coconut Oil
  • Black Mustard Seeds-1/2 teaspoon
  • Fenugreek Seeds-1/4 teaspoon
  • Fresh or Dried Curry Leaves-12
  • Chili Powder-1teaspoon
  • Ground Coriander-1 teaspoon
  • Ground Turmeric-1/4 teaspoon
  • Kokum-1 tablespoon/ Tamarind Pulp-20ml
  • Peeled King Prawns-12
  • Fat Reduced Coconut Milk-1 tin(400 ml)
  • Dried Red Chilis-2

Preparation:

  1. Peel the onion and ginger and chop finely.
  2. Chop the tomatoes.
  3. Heat a nonstick frying pan and add 3 tablespoons of oil to heat. When it becomes hot and smoking adds half of the mustard seeds and curry leaves, the fenugreek seeds, ginger.
  4. Fry the ingredients for few seconds. Then mix onion and cook over medium heat. Cook until it is dark golden.
  5. Add chili powder, coriander, turmeric, and cook for a few seconds.
  6. Mix tomato and kokum or tamarind.
  7. Cook until you can see oil separating from the sauce.
  8. Mix water of few tablespoons as the sauce gets back to the consistency as it was before.
  9. Season with sea salt. Add the prawns.
  10. Cook the prawns until it is cooked through and the sauce becomes dry.
  11. Now mix coconut oil and bring to boil. As it is boiled turn the heat down to low.
  12. Heat 1 tablespoon of oil in another pan along with the chilies, remaining mustard seeds, curry leaves.
  13. Fry for 10 seconds and tip into the curry.
  14. Your Malabar Prawn Curry is ready to be served with steamed rice.

Ingredients:

  • Golden Caster Sugar-50g
  • Thai Fish Sauce-1Tablespoon
  • Finely Sliced Red Chili-1
  • Finely Sliced Large Piece of Ginger.
  • Rainbow Fillets-2
  • Halved 2 Heads, Bok Choi
  • Lemon Juice of ½ Lemon
  • Coriander sprigs
  • Steamed Rice.

Preparation:

  1. Add sugar and a splash of water in a large shallow pan.
  2. Heat gently as the sugar be dissolved.
  3. Now increase the heat and bubble the syrup as long as it turns a dark amber color.
  4. Add the fish sauce, most of the chili and ginger, and 1 tablespoon of water.
  5. Cook to boil until it turns into syrupy.
  6. Mix the fish fillets keeping skin-side down.
  7. Add bok choi, keeping cut side down.
  8. Use a lid to cover the pan.
  9. Cook for 4-5 minutes as the fish is cooked through and the bok choi is wilted.
  10. Turn off the heat now.
  11. Add the lemon and scatter with the remaining chili, ginger, and the coriander sprigs.
  12. Serve with rice.

28. Ginger Shakin Beef

Beef is the main ingredient of this recipe. You need only 16 minutes to spend on the recipe. I believe you will find a very rare dish as it is spending less time in the kitchen. So just follow my instructions and cooking recipe of leaving all hesitation.

Ingredients:

  • Sirloin Steak (1.5cm thick)-300g
  • Ginger of 4cm piece,
  • Miso Paste-1 tablespoon
  • Runny Honey-2 teaspoon
  • Pak choi-2(250 g)
  • Red Wine Vinegar-1 tablespoon

Preparation:

  1. Remove the fat of the sirloin. Slice the fat finely and put it in a cold non-stick frying pan.
  2. Put the pan on medium heat to crisp up.
  3. Peel the ginger and cut into matchstick. Add to that crisp.
  4. Cut of the muscle.
  5. Dice the steak into 3cm chunks.
  6. Mix with the miso as it is coated well.
  7. Remove the crispy fat and ginger and put aside.

  2. Cut a small cross in the base of each tomato and put it into the hot water for 15 seconds.
  3. Remove the tomato from hot water and throw it into cold water and keep for 30 seconds. Then remove from cold water.
  4. Peel away the skin of the tomatoes with a sharp knife. Start from the cross that you did.
  5. Cut the tomatoes into quarters and remove the seeds and any membrane. Cut into small dice and put them aside.
  6. Cook the pasta in the boiling water as is instructed in the packet.
  7. In the meantime heat oil in a large frying pan.
  8. Add the garlic and fry for 2 minutes until it is turning to golden.
  9. Push these one side of the pan.

  1. Prepare dipping sauce first. Chop the chili finely. Mix the lime juice, sugar, fish sauce, and 8 tablespoons of water.
  2. Pour half of the sauce into a cute bowl for dunking. Keep the rest to dress your salad with lettuce, herb, and noodles.
  3. Smash the prawn with the side of the knife and chop them finely.
  4. Peel the shallot and garlic and chop finely.
  5. Trim and chop the spring onions. (White and green parts need to be separated).
  6. Chop coriander leaves finely.
  7. Place the prawns, shallot, garlic, coriander, white parts of onion in a large bowl, season with black pepper and a pinch of sea salt, and mix these well.
  8. Spoon a teaspoon of the mixture in the middle of the wrapping paper.
  9. Brush the edge of one wrapper with water. Fold it in half. Pleat and pinch the edges together to secure.
  10. Repeat with the others.
  11. Place a pan with oil over medium heat. As soon as the oil is hot add the dumpling and splash water. Cover the pan. Let it be steamed for 2 minutes. Take off the cover if the water is vaporized and then fry for two minutes more.

  13. Toast the peanuts in a dry frying pan and crush them.

  • Bay Leaves-2/3
  • Few Thyme Sprigs
  • Mashed Potatoes or watercress

Preparation:

  1. Heat the oven to 200C.
  2. Remove excess fat from the duck but don’t remove any jelly.
  3. Place the carrots, garlic, orange wedges into a large tin for toasting. Mix oil and season well.
  4. Season the duck legs and place on the top of the veg, keeping skin side up.
  5. Roast for 40 minutes. The carrots will be tendered and the duck will be turning into gold.
  6. Mix the citrus juice, vinegar, and sugar. Stir them well until the sugar dissolves.
  7. Pour over the veg. add chicken stock or jellified duck.
  8. Tuck in the bay and thyme here and there.
  9. Roast for 10 minutes until the carrots are surrounded with syrupy sauce and the duck is golden.
  10. Season the sauce to taste.
