  1. Heat a large skillet over medium-high heat. Then add butter and olive oil and wait until melted.
  2. Add the sliced smoked sausage and cook for about 4 to 5 minutes until sausages turn to brown.
  3. Add the broccoli and reduce heat to low and cover it. Cook about 5 minutes more.
  4. Add the cooked rice, garlic powder, onion, and salt to the skillet.
  5. Stir and add the shredded cheese. Keep stirring until the cheese is melted.
  6. You can garnish with spring onions and serve warm.

  • Mango/Peach Salsa: 2 cups
  • Fresh Cilantro: 2 tbsp. (chopped)
  • 2 Rotisserie Chicken Breasts

Preparation:

  1. In a large pot heat corn and beans over medium-high heat. Add 1 tablespoon of spice mix and cook for 30 seconds.
  2. Then add salsa and pre-cooked brown rice to the pot and cook for three to five minutes or until simmering.
  3. Add another tablespoon of spice mix and salt to taste.
  4. Then shred the rotisserie chicken by hand and remove the pot from the heat and stir in shredded chicken and cilantro.

  4. Bake for 10 to 15 minutes or until crust.
  5. It’s crispy and golden brown. Stands 5 minutes before serving.

  4. Bake for 20 to 30 minutes until golden brown. Stands 5 minutes before serving.

  1. To make the filling, heat a large wok or pot over medium-high heat. Pour oil and add onion, ginger, lemongrass, and garlic, and cook until the onions begin to soften and everything gets fragrant.
  2. Then pour the tofu and water chestnuts and keep stirring. Add soy sauce, hoisin sauce, sriracha, and syrup and mix it until all the flavors are distributed well throughout the filling.
  3. Then turn off the heat and set up your plate for the lettuce leaves.
  4. Arrange the lettuce leaves on a large dish and pour the filling into each lettuce leaf. Garnish each lettuce leaf with grated carrots, green onions, fresh mint, and peanuts and serve immediately.
